Commonly used in Japanese and Asian style cooking, the kiritsuke is a multi-purpose knife.  Often referred to as simply a "K-Tip", the kiritsuke was often viewed as a status symbol by Japanese executive chefs. 

 

Standard steel is AEB-L stainless steel with blade lengths of 8.5-9.5".
